Raspberry and Pistachio Oatmeal with Caramelized Bananas

Ingredients
For the oatmeal:
80 g whole-grain rolled oats
1 TBSP flaxseeds
220 ml oat milk
Generous pinch of salt
Smal pinch of cinnamon
For caramelized bananas:
2 bananas
1 TSP butter
1 TSP rapeseed oil (if needed)
For serving:
½ cup frozen raspberries
Handful of chopped pistachios
2 TBSP hemp seeds
1 TBSP honey or agave syrup
Fresh raspberries for garnish (optional)

Instructions
Caramelize the Bananas
Slice the bananas lengthwise and briefly sauté them in a small amount of butter. Keep the heat moderate so the butter and bananas don’t burn. Once the bananas are beautifully caramelized, remove the pan from the heat and set aside.
Warm the Raspberries
Gently heat the raspberries in the microwave or in a small saucepan on the stove, just until warmed through.
Prepare the Oat Base
Grind the rolled oats and flaxseeds into a coarse flour.
Cook the Oatmeal
Whisk the oat flour into the plant-based milk, then add the salt and cinnamon. Place over medium heat and bring to a gentle boil, stirring constantly. Cook for about 5 minutes, continuing to stir, until thick and creamy.
Assemble and Serve
Divide the oatmeal between two bowls and top with the caramelized bananas. Add the raspberries, pistachios, and hemp seeds, then lightly drizzle with honey. Finish with any additional toppings you like.
