Baked Pears with Mascarpone and Pistachio

This recipe is incredibly simple to make, yet the results are impressive enough to leave your guests speechless. Just the sight of this dessert always makes me happy, while the comforting aromas of cinnamon and vanilla fill our home with warmth. My kid loves it, my husband loves it, my friends love it. It’s a winner! Enjoy!

Ingredients
For the pears:
4 pears
½ TSP cinnamon
2 TSP honey
For the filling:
500 g mascarpone cheese
250 g cream cheese
200 ml double cream
2 TBSP powder sugar
1 TSP vanilla extract
For the topping:
Handful of pistachios
2 TSP honey

Instructions
For the filling, combine mascarpone cheese, cream cheese, sugar, and vanilla paste, mixing until smooth.
In a separate bowl, whip the heavy cream, then gently fold it into the mascarpone mixture. Cover with cling film and refrigerate for at least 4 hours, preferably overnight.
Cut the pears in half and remove the core using a small spoon. If the pear is ripe, it should come out easily.
Place the pear halves on a baking sheet lined with parchment paper. Drizzle with honey and sprinkle with cinnamon.
Bake in a preheated oven at 180°C (350°F) for 40-45 minutes.
Remove the pears from the oven and let cool to nearly room temperature. Once cooled, transfer to serving plates and fill them with mascarpone. The easiest way to do this is by using an ice cream scoop.
Drizzle with honey and top with chopped pistachios.
