Simply Delicious Shrimp Pasta with Olives and Lemon

This simply delicious shrimp pasta is rich, comforting, and easy to make. Fresh shrimp are ideal when available, but frozen will do the trick as well. Serve it as a main or a side dish; if serving alongside other plates, this recipe will feed around 8 people. Enjoy!

Ingredients

For the sauce:
3 TBSP olive oil
4 shallots
6 garlic cloves
Pinch of sugar
100 ml dry white wine
700 ml passata
1 TSP dry oregano
1 TSP dry basil
10 olives (with pits)
500 g frozen shrimps (heads removed, shells on)
Salt and freshly ground black pepper to taste

For serving:
500 g pasta of choice
Bunch of fresh parsley
Pangrattato
Lemon

Instructions

Prepare the Sauce Base
Heat the olive oil in a large pan over medium heat. Finely chop the shallots and sauté them until soft and translucent. Add the garlic cloves (whole, but peeled) and cook briefly, just until fragrant.

Deglaze and Build Flavor
Add a pinch of sugar, then pour in the white wine. Let it simmer for a few minutes until the alcohol evaporates and the sauce reduces slightly.

Simmer the Sauce
Stir in the passata, dried oregano, and dried basil. Let the sauce simmer gently for 15–20 minutes to allow the flavors to develop.

Cook the Pasta
Meanwhile, cook the pasta in well-salted boiling water according to the package instructions until al dente.

Add Shrimp and Olives
Add the olives to the sauce, then stir in the frozen shrimp. Cook for 4-5 minutes, just until the shrimp turn pink. Season to taste.

Combine and Serve
Drain the pasta, reserving a small cup of pasta water. Add the pasta to the sauce and toss gently to coat. Loosen with a little pasta water if needed. Serve with fresh parsley, pangrattato, and a squeeze of lemon juice.
