Caramelized Onion and Carrot Hummus

This caramelized onion and carrot hummus is a delicious twist on traditional hummus, made with sweet, slow-cooked onions and carrots. The result is a creamy, smooth dip with rich savory flavor and a touch of natural sweetness that pairs perfectly with earthy chickpeas. Made with wholesome ingredients, it’s both nutritious and satisfying. Enjoy it with fresh vegetables, pita chips, crackers, or spread it on sandwiches and wraps.

Ingredients
1 can chickpeas
2 small yellow onions
2 medium carrots
2 cloves garlic
5 TBSP olive oil
1 TBSP white balsamic vinegar
½ TSP cumin powder
Juice of ½ lemon
Salt and pepper to taste

Instructions
Prepare the vegetables
Peel and roughly slice the onions and carrots. Peel the garlic.
Caramelize the onions and carrots
Heat 3 tablespoons of olive oil in a pan over medium heat. Add the onions and carrots and cook slowly, stirring occasionally, until golden and soft (about 40–45 minutes). About halfway through, add the garlic cloves and a pinch of salt to help with caramelization. Near the end, deglaze the pan with the white balsamic vinegar, then remove from heat.
Blend the hummus
Drain and rinse the chickpeas. Place the chickpeas, vegetables, remaining olive oil, cumin, and lemon juice in a food processor. Blend until smooth, adding a little hot water in the process to reach your desired consistency.
Season and serve
Taste and adjust seasoning with salt, pepper, and extra lemon juice if desired. Serve as a dip with fresh vegetables, falafels or grilled meat.
