20-Minute Lentil Power Salad

This vibrant lentil salad is packed with nutrients, colors, and textures, making it a quick and satisfying meal. Ready in just 20 minutes, it’s perfect for a light lunch or dinner and can easily be made ahead. Simply double the ingredients to prepare extra and pack it for a healthy office lunch the next day. Enjoy!

Ingredients

1 can lentils
1 zucchini
½ broccoli head
½ green apple
Handful of rockets
½ cup red cabbage
Handful of almonds
3 TBSP olive oil
1 TBSP balsamic vinegar
Juice of ½ lemon
Salt and pepper to taste

Instructions

Grill the vegetables
Slice the zucchini into 0.5 cm thick rounds. Lightly coat a griddle pan with olive oil and grill the zucchini until tender and lightly charred.
Tear the broccoli into small florets and grill in the same pan once the zucchini is done. Add a little more olive oil if needed.

Toast the almonds
Remove the broccoli and use the same pan to lightly toast the almonds until golden and fragrant.

Prepare the other ingredients
Rinse the lentils thoroughly. Slice the apple and cabbage into thin strips. Wash and dry the rocket leaves.

Make the dressing
Combine the remaining olive oil (about 1 tbsp), balsamic vinegar, and lemon juice.

Assemble the salad
In a large bowl, toss together the lentils, grilled zucchini and broccoli, apple, cabbage, rocket, and toasted almonds. Drizzle with the dressing, season with salt and pepper, and mix well before serving.
