Sticky Gochujang Rice Noodles with Brussels Sprouts

These sticky gochujang noodles are a quick, flavor-packed meal, perfect for anyone who enjoys Asian-inspired flavors. The dish offers bold taste and plenty of texture. It’s a time-saving recipe, ideal when you want a homemade meal without spending too much time in the kitchen. You can easily swap or add different ingredients depending on what you have on hand. Ingredients

For the base:
3 TBSP canola oil
400 g rice noodles
300 g Brussels sprouts
300 g cabbage
2 large carrots
100 g peanuts

For the sticky gochujang sauce:
1 heaped TSP hoisin sauce
1 heaped TSP gochujang
5 cm piece of ginger (about 70 g)
4 garlic cloves
Juice of 1 lime
1 TSP sugar
2 TBSP rice vinegar
2 TBSP dark soy sauce
3 TBSP light soy sauce

Instructions

Prepare the ingredients
Cook the rice noodles according to the package instructions. Drain and rinse briefly with cold water to stop the cooking, then set aside.
Thinly slice the Brussels sprouts and cabbage. Cut the carrots into thin matchsticks and roughly chop the peanuts. Peel and finely grate the ginger, and mince the garlic.

Make the sticky gochujang sauce
In a small bowl, combine the hoisin sauce, gochujang, rice vinegar, dark soy sauce, light soy sauce, and sugar. Add the lime juice, grated ginger, and minced garlic, then mix well until smooth.

Cook the vegetables
Heat a large pan or wok over medium-high heat with a small amount of oil. Add the Brussels sprouts and carrots, and stir-fry for about 3–4 minutes until they begin to soften. Add the cabbage and cook for another 2–3 minutes, stirring frequently, until the vegetables are tender but still slightly crisp.

Combine the noodles and sauce
Add the cooked rice noodles to the pan along with the gochujang sauce. Toss everything together well so the noodles and vegetables are evenly coated. Cook for 2 minutes, stirring constantly, until the sauce thickens slightly.

Finish and serve
Stir in most of the chopped peanuts, reserving a small handful for garnish. Serve the noodles immediately and sprinkle the remaining peanuts over the top. Optionally, add an extra squeeze of lime juice before serving.
